Ingredients:
1 package (8oz) cream cheese, softened
3/4 cups butter, softened
1 cup sugar
2 tsp vanilla
2 1/4 cups flour
1/2 tsp baking soda
2 tsp lemon extract
green food coloring (or desired coloring)
Directions:
Beat together cream cheese, butter, sugar, and vanilla. Mix flour and baking soda in a separate bowl. Add to creamed mixture. Cover and chill in refrigerator for 30 minutes. Divide dough in half on floured surface. Add coloring and lemon extract to one half of the dough, mix in well. Add flour as needed if dough is too sticky, and cut each dough half in half again. Roll out one of the plain dough portions on a floured surface to thin 8×10″ rectangle. Now roll out one of the portions of green dough in the same manner. Carefully place the rolled out green dough on top of the rolled out plain dough. Roll up dough, starting with long side. This will create the pinwheel effect. See picture below. Wrap dough, seam side down in plastic wrap. Repeat with remaining two pieces of dough. Refrigerate for at least one hour. Slice logs into 1/4″ thick slices. Place on parchment lined baking sheets and bake at 350 degrees for about 10 minutes, or until starting to brown at edges. Allow to cool for a few minutes on pan. Remove to cooling rack to cool completely.
